Honestly!

It’s soft and pillowy, but dense enough to be rich, add the crunch of the walnuts and the sweet burst of golden raisins, and you have perfect Banana Bread. Mmmm… Now massage a slice with butter and make yourself a cup of tea.

I noticed yesterday that I had a bunch of extra bananas hanging around attracting some airborne friends so I decided to make some banana bread before my bananas turned into a bug’s lunch. The recipe I have always seemed to turn out dry and too brown. Thanks to some Pinterest searching and a little bit of my own imagination, I now have the *perfect* Banana Bread recipe. And now you do, too. (You’re welcome. It was really no trouble.)
The Best Banana Bread EVER
Yield: Two loaves
4 c. flour
2 t. baking soda
1/2 t. salt
2 eggs
2 1/4 c. sugar
1 c. vegetable oil (listen, no one said it was the best HEALTHY banana bread…)
4 T. buttermilk
1 T. vanilla extract
6 ripe bananas, mashed
1 c. chopped walnuts, plus 1 c. chopped walnuts for topping
1 c. golden raisins, soaked and drained
1. Preheat oven to 325 degrees.
2. Grease and flour two 9x5x3 pans (aka loaf pans).
3. Blend flour, baking soda and salt together in a bowl and set aside.
4. Mix eggs, sugar and vegetable oil until combined.
5. Add flour to egg mixture and when blended, add buttermilk, vanilla and bananas. Mix well!
6. Fold 1 c. of walnuts and 1 c. raisins into the batter and divide batter between two pans.
7. Top batter with remaining nuts.
8. Bake for 45-65 minutes until toothpick comes out clean. (Mine took 65 minutes.)

I’ve found that using real butter instead of veg oil makes a difference too. It’s not diet banana bread by any stretch, but still so rich and yummy.
